以下 是3/26那天到君悅試菜後所做的紀錄

因為可憐的新郎當時還在美國辛苦的工作 (他真的很想來...因為婚禮當天都吃不到啊 XD)

所以就由我和當天盡責的美食團擔任試菜(和批評?)的工作

因為是要和新郎"報告"用的

所以紀錄就用英文寫啦~~

感謝試菜團的參與

希望婚宴當天的菜色大家都有滿意喔~~

 

Grand Hyatt set up the table exactly looks like our main table. This is our Dish Tasting team for the night:

This is the tableware we choose for main table (silver)

The table clothes is gold color (the centerpiece is for the guest's table)

The Chair clothes is dark brown...with two types of bows to choose from...I choose the gold one (left)

1. Selection of Appetizers:

Four appetizers (and Hershey's chocolate) will be available on the table when the guests walk in.

Overall comments: the taste is a little bit salty but all good for beer I think. Shrimp is the best.

Decision: Change the Burdock to lotus root salad.

b. Fried small shrimp (I am sure you will like this one)

c. Burdock salad- a little bit too salty, so we decide to change it to lotus root salad, which will be a little bit sour

d. tofy skin wrap (some vgetables wrapped by tofu skin...no bad)

2. Roasted suckling pg, dried mutlet caviar, jellyfish, barron point oyster and tuna tataki

Overall comment: Oyster is the best! but not everyone will eat it. I personally don't like tuna tataki, a little bit pain but my dad likes it given it's "red"

Decision: Ask the chef to grill the outskirt of the tuna a little bit more...makes it more smoky or with grilled mark or something...

Everytime Hyatt servce the food, they will show the big plate to the table and then split the dishes for every guest.

For this one, they show the first 3 dishes in one set...

3. Deep fried rice dumplings with peanut powder

This is a traditional taiwanese wedding dish. It's sweet but by custom it has to be the 3rd dishes in the wedding banquest.

Overall comment: it's hard inside but not as chewy as I would like.

Decision: No change.

4. Shark's fin soup with hasma and crab meat

Overall comment: everybody loves this dishes. It comes one bowl per person. Hot soup with decent volume of shark fins and crab meat. Hard to explain what hasma is so we decide to not include it in the printed menu.

Decision: no change. But we will prepare another type of soup (no shark fin, with fish balley...) for them. You probably want to let me know how many of your guests would like to switch.

5. Braised abalone with black mushromms in oyster sauce

Overall comment: Abalone is smaller than what I expected. Mushroom is pretty good.

Decision: no change

6. Steamed lobster with scallions and garlic

Overall comment: meat is not easy to get off from the shell though the presentation looks nice

Decision: no change on taste. Ask the chef to crack the shell more before serving.

7. Wok seared scallops and cuttle fish in X.O. sauce

Overall comment: a little bit spicy but I think you would like the X.O.sauce (the one similar to your "bala chiang".

Decison: no change.

8. Steamed star groupa with Yunnan Ham and Bean Curd

Overall comment: setting is pretty but the fish is not tender, and the sauce is too light.

Decision: change "star groupa" to "groupa"-> this one is more tender. Ask to make the sauce stronger.

9. Doubled boiled black chicken soup with wild yam and chinese herbs

Overall comment: tasty. but not sure if foreigner will scare the black color chicken and ginseng taste.

Decision: no change.

10. Sewed pork ribs with rock sugar and chinese tea

Overall comment: very tasty. meat is tender. but this one comes out a little bit late. no tea leaf taste

Decision: move this dish a little bit earlier (after lobster)

11. Steamed glutinous rice with baby shrimp, egg yolk, chicken and mushroom in lotus leaf

Overall comment: very good. one of everyone's favorate. Used a lots white peppers. Quite unique

Decision: no change

12 Grand dessert: fruit (3 types), dessert (3 types- Ice cream, berries pie, woo-long tea jello

Overall comment: fruit is not sweet enough. should serve fruit before dessert. The presentation of the dessert "wow" everyone.

Decision: change type of fruit to pineapple and watermellon. serve fruit first. Change the woo-long tea jello back to Mango flvaour-> more tasty.

All others:

- Confirm the combination of tabe clothes- GOLD, and chair clothes- Dark Brown

- Prepares spicy chili at the table

- Prepare the folk and kniff for everyone starting from the beginning
